RECIPE: Spanish inspired Baked Eggs

This spanish inspired baked eggs recipe makes the perfect lazy Sunday brunch!
This is a lovely recipe I came up with myself. I was inspired to make these tasty baked eggs while I was having a little peruse of Pinterest (please follow us by the way). It's a tomato based sauce with aubergine, black olives and chorizo sausage. The juicy chorizo gives such a rich and tangy flavour (and this is why I say it's spanish inspired). I've never baked eggs before, normally I'd go for poached or scrambled but actually baking eggs gives a rather delicious outcome and the tomato sauce makes a perfect accompaniment. Here's how you can make them too...

INGREDIENTS
For Tomato Sauce:
2 cloves of garlic
3-4 tomatoes
1 tsp tomato paste
A handful of black olives
1/2 a chorizo sausage

For Topping:
1/2 an aubergine
A handful of spinach leaves
1 tbsp of mild cheese
1 large egg
Olive oil
Salt & Pepper

METHOD
Pre heat the oven to 200°C. Slice the aubergine into 1cm thick discs and pop in the oven with a splash of olive oil & a pinch of salt for 5-10 mins. Make the tomato sauce by first chopping the garlic, tomatoes, olives and sausage into small places. Add ingredients to a frying pan with some olive oil and cook on a low heat adding water & tomato paste until it is desired consistency. While the sauce is still warm add into it a few spinach leaves and place into an oven proof dish with the cooked aubergine. Top with a sprinkle of cheese and crack over an egg. Place in the oven for 10-15 minutes. Et Voila! 
Serve with some crusty bread and enjoy straight out of the oven dish. Great for sharing! This spanish inspired baked egg recipe is so simple and delicious! It's also not too bad for the waistline and healthy with all those veggies and being a perfect mix of carbs & protein.
